Depends on what kind of web hosting. If a large commercial enterprise, stick with the mainstream, commercially supported versions.
For home use, I use Ubuntu 8.04 LTS, as it is supported with patches for 3 years.

I've seen CentOS (which is a clone of Red Hat) used a lot.
Most of the companies I consult for use RHEL or a derivative of RHEL, then again most companies hire me because of my RHEL/CentOS background so the results are biased.
I'd like to suggest FreeBSD (google it)
Yahoo uses it and hotmail used it before it was purchased by microsoft.
